The grapes were harvested by machine and pressed immediately on arrival at the winery. Inoculation with selected yeast ensured fermentation at 14 to 16C on new French Oak staves in stainless steel tanks.
Fermentation on oak followed by periodic lees stirring added weight and texture to the wine. The wine did not go through malolactic fermentation and retains its natural acidity.
